Curried spinach pea soup
Yet another soup recipe from the
Moosewood New Classics cookbook. I modified this one a fair amount, since it wanted me to use 2 pots, which is against my theory of soup. So I did everything in one pot. I also used frozen spinach instead of fresh, which was fine. Finally, I didn’t purée all of the soup because I thought it would be nice to have some chunks. I later decided that it would be better all smooth, since the spinach was kind of stringy. I also think I would use more spinach and less peas. Other than that, it turned out very nicely. I am hoping for an immersion blender for Christmas to make puréeing soup easier

Spinach coconut soup
This week has been a bit chilly, and I had a little cold, so it was perfect time for soup. I found a couple nice-sounding recipes in the
Moosewood New Classics cookbook, and decided to try this one, mostly because I had everything on hand. It called for some white rice and potatoes, which thickened it a bit, and also for coconut milk, which is a favorite of mine. I did substitute onions for leeks, because I didn’t have leeks. This is definitely a soup I would make again.

Penne with creamy tomato, spinach, and seitan sauce
One day recently I was trying to decide what to make for dinner. I was feeling a little sick, and was looking for comfort food. I thought I would make my
Macaroni and cheese with spinach recipe, but we were out of flour. So instead I whipped up something new. I already had the frozen spinach thawing, so it would have to have spinach. We also still had a bunch of tomatoes from the garden (which had been ripening indoors). So I decided they would be good together. I also wanted it to be creamy, so I used the new trick I learned this summer of blending silken tofu with a little white miso and lime juice. Finally, I added some seitan (mock abalone) for a little more protein. The result was quite tasty.

spinach and six cheese ravioli with roasted red pepper and tomato sauce
Tonight I revisited a recipe I had not tried in about 10 years, so it is basically new again – ravioli. They are a lot of work, but Clare requested it, specifically with goat cheese. I ended up buying some pre-shredded italian mix with mozarella, asiago, romano, parmesan, and provolone, and I also bought some goat cheese. I mixed these up with frozen (thawed) chopped spinach, a little salt & pepper, and a pinch of nutmeg. I used a pasta recipe from my first cookbook ever,
Step by step cooking – Mexican, Italian, and Chinese. I made my basic tomato sauce, but also included diced roasted red pepper and TVP. It is a lot of work, and makes a pretty big mess, but Clare was very impressed, and so was I. The goat cheese gave it an extra special flavor. If you’ve ever made ravioli yourself, you will appreciate why it is so expensive in restaurants.
